Stardog is verified to run on Ubuntu 16.04 and 18.04, RHEL 7 and CentOS 7, Amazon Linux 2, recent versions of OSX, and Microsoft Windows Server 2019.
What about?

I don't see any reason why it wouldn't run just fine on Centos 8. It just hasn't been verified so there may be unanticipated problems. Stardog would probably run just fine on any number of platforms but I believe this is more about setting expectations on where it can be run than a list of platforms it will only run.
It shouldn't be too difficult to give it at try and I'm sure any feedback on any problems you experience would be greatly appreciated.
