Is there any way to change the connection to a different server in Studio?

You should be able to bring up the connection dialog by hitting the lightning bolt at any time and connect to a different server.
Reconnect on startup selects the default connection to use when starting Studio. If you want to change to a different Stardog server you could enter a new endpoint that you can save under "My Connections" to avoid entering it every time. Appricicate the visuals. What @crapthings lacks in words, they make up for in pictures. It's like internet sign language.
